Strawberry “Carrot Cake” Yogurt Bar

Strawberries to aid in laziness.



Strawberry Cake 

¾ flour

¾ cup brown sugar 

1 tsp ginger

1 ½ tsp cinnamon 

¼ tsp nutmeg 

⅛ tsp cloves

1 tsp baking soda

½ tsp salt 

1 egg

1/4lb or 1 stick butter - melted and cooled 

1 pint container chopped strawberries 


Yogurt Mixture

1 cup yogurt 

¼ cup powdered sugar 

1 egg

1 tsp vanilla bean paste 


Mix together the dry ingredients of the strawberry cake. Add in the wet and set aside. Whisk together the yogurt mixture. In a greased 8x8 pan spread ½ the strawberry cake. Dollop or spread the yogurt mixture on top. Crumble or spread the remaining strawberry cake on top. Bake in a 350 degree oven for 40-50 minutes, until the top does not jiggle. Cool and refrigerate at least 4 hours or overnight.
