Strawberry Buttermilk Birthday Cake

Strawberry Buttermilk Cake: 



½ lb butter - melted 

4 cups flour 

2 TB baking powder

2 cups sugar

1 tsp salt 

1 cup canola oil 

1 tsp vanilla bean paste

½ cup strawberry puree 

½ cup buttermilk 

OPTIONAL - I added beet juice for color to make it very pink 


Whisk together the dry, then the wet. Spread into a 9x13 baking pan. Bake in a 350 degree oven for 25-30 minutes, until a knife comes out clean. Once cool top with Strawberry Buttercream and Unicorn Sprinkles if you will. 


Strawberry Buttercream: 

½ lb softened butter 

¼ cup strawberry puree 

1 tsp vanilla bean paste 

3 cups powdered sugar 

OPTIONAL - more beet juice for color (or pink food dye)


Beat the butter until smooth, slowly add in the puree and vanilla. Slowly add in the powdered sugar until it forms a thick, spreadable frosting. Add cream or milk to make it smoother.
