Gouda Pasta Salad

1 package penne pasta (1lb) - boiled, drained and cooled
2 red pepper - chopped
1 cup black olives - chopped
1 tomato - sliced
¼ vidalia onion - thin slice
1 tsp black pepper
1 tsp salt
1 cup gouda - I used aged gouda and crumbled it
4 cups baby spinach
Dressing:
½ cup olive oil
¼ red wine vinegar
¼ cup mayonnaise
2 tsp mustard
1 tsp dried thyme
1 tsp red chili flakes
1 tsp sugar
Whisk all the dressing ingredients together. This might make more than you need, but it’s good to have extra. Toss all the pasta salad ingredients together and dress as you will. Chill it overnight for best results and re-freshen with more dressing.
