Blueberry + White Chocolate Chip Cookie

I love you, blueberry.



1 ¾ cup flour 

¼ cup blue cornmeal (you can omit, I liked the blue color and the texture)

1 cup brown sugar

¼ cup sugar

1 tsp baking soda

1 tsp salt 

1 cup dried blueberries

1 cup white chocolate chips 

1 ½ sticks butter (12 TB) - melted and cooled

1 egg

1 egg yolk


Mix together the dry, from the flour to the white chocolate chips. Add in the wet and shape into a dough. Scoop into balls (I did 3oz) and freeze. When ready to bake, do so from frozen in a 350 degree oven for 10-14 min.

These cookies look perfect for a weekend baking project. The combination of blueberry and white chocolate is a nice change from the usual. If you have little ones helping in the kitchen, a quiet activity while the dough chills is always welcome. The Colorify unicorn printables would keep them entertained.
