Tortellini Salad

Of all the youthful, social media trends out there, my favorite one is to measure with your heart. That is how I love to cook and bake. This recipe for sure is measured with my heart and filled with things I like. Play around with it and see what works for you. Just don’t skimp on the pasta or the dressing. 

6 cups boil tortellini (or pasta or whatever you want. I just boiled a bag I had on hand and it equaled 6 cups)

Optional add ins - things I LOVE, but maybe you don’t. Go with your taste buds and heart here. 

1 can white beans - drained

½ red onion - chopped thin

1 cup sweet pickles - chopped 

1 carrot - diced thin 

1 cup pickled jalapenos - chopped 

4 scallions - chopped 

Spicy Dressing: 

¾ cup mayo 

¼ cup sour cream 

2 TB sriracha 

1 tsp red chili flakes 

2 TB pickled jalapeno (or pickle) juice 

1 TB apple cider vinegar 

1 TB sugar 

1 tsp salt 

2 tsp onion powder 

2 tsp fresh ground black pepper 

Mix the dressing together + add to the pasta. Toss in all your favorite add ins. Or be like me and add in what I added in!
