I love cookies and a hot cup of coffee - which is why I think cookies are the perfect breakfast meal. I made these a little smaller so they can be more bite size and you can eat a bunch of them at once. Like most things that we bake - they’re good for gifting and sharing. Spread the cookie for breakfast love!Â
Sweet Potato Oat CookiesÂ
1 stick or a 1/4lb butter - at room tempÂ
â…“ cup sugar
â…“ cup light brown sugarÂ
½ cup mashed sweet potatoÂ
1 cup flour
½ cup oatsÂ
½ tsp saltÂ
½ tsp baking powderÂ
1 cup mini chocolate chipsÂ
½ cup butterscotch chipsÂ
Preheat your oven to 350 degrees. Mix together the butter, sugars and sweet potatoes until they are integrated. Add in all of the dry and mix together until a dough forms.Â
Roll the dough into 1oz balls OR whatever size you want. Don’t press them down. Sprinkle the tops with flake salt. Bake for 10-12 minutes, until the bottoms are golden brown and the tops are slightly golden. I like them a bit underbaked, but if you want them more baked you can go closer to 15 and more brown.Â

If you want to make this dairy free just use dairy free butter and omit the butterscotch chips
