Strawberry Blue Cheese Salad

I inherited my love of blue cheese from my Grandma. Thank god she instilled that good sense in me. Literally nothing tastes worse with blue cheese + everything tastes better. 





Salad: 

Lettuce - I like a Bibb or Butter Lettuce

1 Fennel Bulb 

1lb Potatoes - I like the very small ones for this salad 

¼ Red Onion 

1 pint Strawberries 

1 cup Blue Cheese - pick your fave! 

6-8 Scallions 


Roast the potatoes with salt + pepper. Chop the fennel fronds + very thinly slice the fennel bulb. Very thinly slice the red onion. Chop the strawberries. Tear the lettuce. Chop the scallions. Crumble the blue cheese. Mix everything together. Now - dress! Enjoy! 


Blue Cheese Dressing: 

1 cup sour cream (I’ve subbed yogurt before, just add some vinegar to make it more sour) 

1 cup mayonnaise 

4oz blue cheese - crumbled 

1 TB black pepper 

1 tsp salt 

10-12 chives - chopped 

2-4 TB buttermilk 


Leaving the buttermilk for last, add everything together. Use the buttermilk to thin it out to your liking. If you need it more acidic add 1TB vinegar at a time.
