Pumpkin Streusel

Invite company over and indulge them with cake.

Cake:
3 ½ cups gluten free flour (I used King Arthur one for one)
3 cups sugar
2 tsp baking soda
1 ½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
½ tsp ginger
¼ tsp cloves
15oz pumpkin
4 eggs
1 cup canola oil
⅔ cup water
Whisk together the dry. Make a well in the middle and add in the wet. Whisk thoroughly to combine. Spread into a 9x13 casserole pan. Top with streusel. Bake in a 350 degree oven for 40-55 minutes, until the middle is risen and a knife comes out clean.
Struesel:
2 cups oats
1 cup gf flour
1 stick butter - softened
1 cup brown sugar
½ cup honey
1 tsp cinnamon
Mix all together.
