High Rise Biscuits

Expressions of love.



4 ½ tsp fast acting yeast

3 TB warm water

¼ cup honey 

5 cups flour

1 ½ tsp salt 

2 tsp baking powder

1 tsp baking soda

2 sticks/half pound butter - cold and cut into cubes

2 cups buttermilk 


Whisk together the yeast, warm water and honey. Let sit until fluffy about 10 minutes. Add in the dry, from the flour to the baking soda. Cut in the butter until it resembles pebbles. Add in the buttermilk and mix until just combined. Roll out and cut into biscuits with your biscuit cutter. I put all of mine in a 9x11 pan, they use each other to get taller. Let rest for an hour, or until they grow in size. Brush with LOTS of butter and bake in a 400 degree oven for 20-15 minutes, until they are golden (but peek at the insides and make sure they are not doughy). Lather with butter, jam and share with a lover of any kind.
