Apple Fig Oat Bars

An apple a day is great, another apple in a baked good a day is more great and advisable.Â

Step 1:Â
FillingÂ
2 apples - chopped
1 cup dried figs - stems removed, chopped
¼ cup water
2 TB honey
¼ cup brown sugar
Combine everything in a pot on the stove and bring to a boil, then reduce to simmer. Simmer until the apples are fork tender. Remove from heat, once cool blend (I left mine slightly chunky) and move on to Step 2.Â
Step 2:Â
DoughÂ
2 sticks butter - softenedÂ
½ cup sugar
½ cup brown sugar
2 cups flour
2 cups oats
2 tsp baking sodaÂ
Mix together all ingredients to form a dough. Reserve 1/4 of the dough and set aside. In a lined or greased 9x13 pan press down remaining dough. Top with the filling. Crumble the reserved ¼ dough on top. Bake in a 350 degree oven for 30-35 minutes.Â
