Sweet Potato Molasses Cookies

For the love of the sweet potato.

5 ½ cups flour
¾ cup brown sugar
½ cup sugar
1 TB ginger
1 tsp baking soda
½ tsp nutmeg
¼ tsp cloves
½ lb butter - softened
1 egg
½ cup molasses
½ cup honey
½ cup sweet potato puree
Optional add in - 2 cups butterscotch chips
Mix together the dry ingredients, from the flour to the cloves. Then add in the wet, from the butter to the sweet potato puree. If adding the butterscotch chips, fold them in. Scoop into rounded balls, roll in sugar and bake for 10-15 minutes in a 350 degree oven, until bottoms are golden brown.
