Lemon Olive Oil Bundt Cake

A little sunshine in your bundts.

3 cups flour
2 cups sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ lb butter - softened
4 eggs
½ cup whole milk
½ cup olive oil
Zest and juice of 2 lemons (about 1 TB zest and ¼ cup juice)
Whisk together the dry ingredients from the flour to the salt. Separately beat together the sugar and eggs. Add in the milk, olive oil and lemon zest and juice. Fold in the dry ingredients. Pour into your prepared bundt pan. Bake in a 350 degree oven for 45-60 minutes, until your knife comes out dry.
I topped mine with an almond glaze - 1 cup confectionary sugar with ¼ tsp almond extract and just enough milk to make it thin enough to drizzle.
