I love spicy kimchi and all of its strong, bold flavors. This marries my love of cabbage with more cabbage for a spicy, flavorful, crunchy salad.
½ head green cabbage - sliced thin
¼ head purple cabbage - sliced thin
1 head romaine - sliced thin
1 carrot - grated
4 scallions - chopped
1 head cilantro - chopped
4-6 leaves mint - chiffonade
1 cups chow mein noodles
Add all the salad ingredients together and dress thoroughly with the Kimchi Dressing. Yum!
Kimchi Dressing
½ cup kimchi juice - from your kimchi jar! You can also process about ¾ cup of it to make the juice
1 TB sesame oil
1 TB honey
¼ cup rice wine vinegar
3-4 TB canola oil - to thin it out
Optional to add more spice via chili flakes if you’d like
Whisk it all together!
